The ingredients needed to make Fried Rice:
  1. Take 2 eggs, lightly beaten
  2. Take 3 medium carrots, finely chopped
  3. Make ready 3 green onions, finely chopped

  5. Make ready 3 1/2 cup cooked and cooled rice
  6. Make ready 1 soy sauce
  7. Prepare 1 sambal oelek (very spicy chili paste)

This Thai fried rice is called American fried rice (Khao Pad American) in Thailand, because it uses ingredients that are considered American, like ketchup and bacon. This Chinese fried rice has the flavor those other recipes are missing.

Steps to make Fried Rice:
  1. Heat a teaspoon of butter in a wok over medium high heat. Scramble the eggs and set aside
  2. Heat some butter in the wok over high heat. Add your finely chopped carrots, half of the green onions (so their flavor won't be overpowering like raw onions, but also to have a crunchy texture) and peas. Saute until nicely browned then turn heat down to medium
  3. Add about half a tablespoon butter to the wok (without discarding the veggies), add cooked rice and the rest of your green onions. Fry for a minute or so
  4. Turn off heat and add scrambled eggs (residual heat should warm them through) as well as sambal oelek, soy sauce and sesame oil

I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking. Fried rice is a takeout favorite, but it's also quick and easy to make at home. It's a great way to use up leftover rice—in fact, cooked, cold rice makes the best fried rice—and transform boring leftovers into an entirely new dish.
