The ingredients needed to make 'Somen' & Pork Stir-Fry:
- Take 90 g x 4 'Somen' Noodles
- Make ready 1 tablespoon Sesame Oil
- Get 200-300 g Pork *thinly Sliced
- Get Salt & White Pepper
- Make ready 1 small piece Ginger * sliced into fine strips
- Get 1 Onion
- Get 4 Eggs
- Make ready Canola Oil for cooking
- Make ready 1/2 cup ‘Mentsuyu’ Noodle Dipping Sauce
- Make ready *Note: To make the sauce, mix 1/4 cup Dashi Stock (1/4 cup Water & 1/4 teaspoon Dashi Powder), 1 tablespoon Mirin, 1 tablespoon Sake (Rice Wine), 2 tablespoons Soy Sauce
- Take Extra Soy Sauce
- Take 3-4 Spring Onion *finely chopped
Somen are Japanese dried vermicelli noodles that are usually eaten cold during summer. See recipes for Shrimp Cold Somen Salad, Somen udon soup too. The "mirin" is a sweet vinegar. The shoyu is just regular soy sauce.
Steps to make 'Somen' & Pork Stir-Fry:
- Slice Pork very thinly and season with Salt and White Pepper. Lightly whisk Eggs in a bowl and season with Salt and White Pepper. Slice Onion and Ginger into thin strips.
- Cook ‘Somen’ Noodles as instructed. DO NOT add Salt into the water. Noodles need to be cooked quite firm as you will stir-fry later. After drained, sprinkle Sesame Oil to stop stick together.
- Heat 1 tablespoon Canola Oil in a frying pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
- Add 1 tablespoon of Canola Oil to the hot frying pan and cook Pork. When the Pork changes colour, add Onion and Ginger and cook until soft. Add 'Mentsuyu' Sauce, then combine with cooked ‘Somen’ and the egg.
- Sprinkle extra Soy Sauce over if required, and some chopped Spring Onion and serve.
Somen: The last basic form of Japanese noodle is again wheat-based, and not so different in flavor and texture from Somen noodles are made not just with flour and water, but also with vegetable oil, and. Somen are white wheat noodles, which Japanese cooks serve cold or over ice during the summer. Nagashi somen is now available all over Japan, especially in the summer.
