The ingredients needed to make Smoked Salmon Chirashi-zushi:
  1. Prepare Sushi Rice (*Cooked from 180ml x 3 cups uncooked Rice)
  2. Make ready 1 Avocado
  3. Take 2-3 Eggs

  5. Get 1-2 Spring Onion
  6. Take Shredded Nori
  7. Prepare Roasted Sesame Seeds, Tobiko or Ikura *Optional
  8. Take <Mayonnaise Sauce Ingredients>
  9. Prepare 2-3 tablespoons Japanese Mayonnaise
  10. Prepare 1 teaspoon Soy Sauce
  11. Prepare 1 teaspoon Rice Vinegar (or Lemon Juice)
  12. Get *Note: If you have Ponzu, replace Soy Sauce & Vinegar with the Ponzu

Chirashi means "scattered" in Japanese and typically refers to a fast-to-make bowl of rice topped with vegetables and sashimi. This recipe is wonderful, it is like a sushi scramble, just delicious! Salmon sashimi and avocado chirashi sushi is a kid-friendly dish of Japanese vinegar garnished with different condiments or additional vegetables. The key to any chirashi sushi, despite the toppings, is that the rice is seasoned with a sweet vinegar mixture.

Instructions to make Smoked Salmon Chirashi-zushi:
  1. Cook Sushi Rice. See my 'Sushi Rice' recipe.
  2. Heat small amount of oil in a fry pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
  3. Cut Avocado into small cubes, Smoked Salmon into bite size.
  4. Make Mayonnaise Sauce by mixing all the ingredients.
  5. Place the Sushi Rice on a plate and add some Avocado, Smoked Salmon and Scrambled Egg to decorate it.
  6. Place the Mayonnaise Sauce into a plastic bag, cut a bottom corner of the plastic bag to make a tiny hole, then squeeze the Sauce over the Sushi.
  7. Sprinkle with some finely chopped Spring Onion, shredded Nori and Roasted Sesame Seeds. If you have Tobiko (Flying Fish Roe) or Ikura (Salmon Roe), sprinkle some of them as well and they will make this dish very special.

For chirashi zushi, impeccable ingredients are a must. When selecting your fish and seafood make sure you get sashimi-grade so you know it's as If you can, go to a fish market or a specialist seafood supplier.
