  1. Curry:Heat the pan add grated coconut dry roast until turn brown in colour. Remove it in a plate. In a same pan heat oil add ginger, garlic and red chillies fry until garlic turn brown,add cumin seeds, coriander seeds,fenugreek seeds, black pepper fry for 1mins and remove from heat. In a same pan heat oil add onion and fry until brown, add tomato fry in 2mins.Remove from heat and allow all the ingredients to cool down.
  2. After cool transfer the Ingredients into a mixture jar add Turmeric powder, water and grind into a fine paste.
  3. Heat the oil in a deep pan add grated masala paste add garam masala cook for 5-6mins add water and salt.lower the heat and cook covered.
  4. Omelette : In a large bowl, crack open eggs add salt, onion, Curry leaves, green chilli and turmeric powder and whisk well.
  5. Spread and heat oil on pan and spread omelette mixture on the pan. Removed from the pan after the omelette is cooked from both sides (I made 4 omelette from this mixture). Put these omelettes in gravy and cook gravy on low heat cover the lid and cook for 1-2mins and switch off heat.
  6. Serve with rice or chapatis
