- Boil the eggs & cut lito 4 pieces length wise
- Mash the boiled potatoes
- In a pan add 1 tsp oil add mustard seeds, when they splutter
- Add finely chopped onions. Saute till soft
- Add ginger garlic paste fry for a min
- Add turmeric powder,chilli powder & jeera powder stir for a min
- Add mashed potatoes chilli & coriander leaves stir for 2 to 3 mins off the flame
- Cool the potato mixture & make a smooth paste
- Besan batter
- Mix besan chilli powder,turmeric powder salt and water to make a smooth pouring batter
- Take a slice of egg & cover the slice with potato mixture. Cover the egg slices in this way
- Heat oil in a kadhai
- Dip the covered eggs in the batter
- Deep fry them on medium to high flame till golden
